What it's for
Mostly, the table. This is a chilli oil made to be poured over food, and the way we use it most is the simplest: a spoonful over hummus.
The heat sits in the oil rather than in solid flakes, so it spreads evenly across a dish instead of arriving in patches. Sesame gives it a nutty base and olive oil rounds the finish, which is why it works with Levantine food rather than fighting it.
How to use it
- Over hummus — a spoonful in the centre, or drizzled across the top. The reason most people buy it.
- Mutabbal, labneh and yoghurt dips — the same treatment
- Eggs — fried, scrambled, or over shakshuka
- Grilled meat and chicken — poured over after cooking
- Roasted vegetables — particularly potatoes and cauliflower
- Soups and lentil dishes — a spoonful stirred in at the table
- Manaqish and flatbread — brushed on, or for dipping
- Rice and grain dishes — over mujaddara or freekeh
- Pizza and pasta — where you'd otherwise reach for a commercial chilli oil

The heat
Warm and building rather than sharp. Cayenne gives a steady heat that arrives a moment after the taste, and the two oils soften it. Most people find it comfortable rather than punishing — but start with less and add more, as with any chilli oil.
The base oils
Both are ours. The sesame is cold-pressed and unrefined in our own facility, and it's the same oil we sell on its own — chosen because it's naturally stable and adds a nuttiness that suits pepper. The extra virgin olive oil brings the fruitiness and body.
Most commercial chilli oils are made in whatever refined oil is cheapest. Since an infused oil is mostly carrier, the carrier is most of what you're buying.
On the body
Cayenne oil also has a long traditional use as a warming massage oil, rubbed into tired muscles and joints. That use is still valid, and this is the same food-grade product — nothing in it is unsuitable for skin.
Patch-test first. Capsaicin is what makes pepper hot, and it does the same on skin — keep it well away from the eyes, and wash your hands after applying.
