Ingredients:

  • 4 chicken breasts (bone-in, skin-on for best flavor)
  • 2 tablespoons olive oil, plus a little extra for finishing
  • Juice of 1 lemon
  • 1 teaspoon honey
  • Salt and freshly ground black pepper, to taste
  • Slices of lemon and fresh thyme sprigs, for garnish
  • 2-3 drops of food-grade thyme essential oil

Instructions:

  1. Preheat the Oven: Begin by preheating your oven to 375°F (190°C), setting the stage for perfectly roasted chicken.

  2. Prepare the Chicken: Pat the chicken breasts dry with paper towels. Season both sides generously with salt and freshly ground black pepper.

  3. Marinate: In a small bowl, mix together 2 tablespoons of olive oil, lemon juice, and honey. Brush this mixture over both sides of the chicken breasts. Let them marinate for 15 minutes at room temperature to infuse the flavors. If you have time, you can also cover and refrigerate them for up to an hour for deeper flavor.

  4. Roast the Chicken: Arrange the chicken breasts skin-side up in a roasting pan or on a baking sheet. Place in the oven and roast for about 25-30 minutes, or until the chicken is golden on the outside and cooked through (the internal temperature should reach 165°F or 74°C).

  5. Add Thyme Essential Oil: Just before the chicken is fully cooked (about 5 minutes before the end of the cooking time), remove the pan from the oven. In a small bowl, mix a few drops of olive oil with 2-3 drops of thyme essential oil. Brush this mixture gently over the chicken breasts.

  6. Final Roast: Return the chicken to the oven for the final 5 minutes, allowing the essential oil to infuse under the gentle heat.

  7. Rest and Garnish: Once cooked, remove the chicken from the oven and let it rest for a few minutes. This allows the juices to redistribute, ensuring the meat is succulent and flavorful. Garnish with lemon slices and fresh thyme sprigs before serving.
